Hello! I had such a wonderful weekend taking a break from my “keeping up with the internet” life – and it was glorious! I hope you had time to relax, be refreshed, and spend time with the ones you love. I have been really convicted about being “plugged in” too much – and it was such a breath of fresh air to spend time with my husband, rest, and enjoy worship and fellowship yesterday.
I want to share one of our all-time favorite meals. This is the BEST for a last minute “I don’t have anything planned” meal. It has so many forms – that you can basically make it with anything you have in the house! We eat this at least once a month – and I know there are some cooks out there looking for an easy meal like this!
This is so easy to make for 1-10 people – its basically just Mexican ingredients piled on top of tortillas! These are so good with or without meat – and I always add tons of black beans and corn if not using meat to increase the volume. Serve with chips and salsa – or just by themselves. Perfect family meal everyone will love. 😉
Easy Mexican Pizza

- 6″-10″ Tortillas
- 1 can Fat-Free Refried Beans
- Shredded Cheese
- Shredded Chicken or Ground Beef (Optional)
- Black Beans (Optional)
- Sour Cream (Optional)
- Guacamole (Optional)
- Heat oven to 350 degrees. Place tortillas on several pizza pans (I estimate two tortillas per person) and top with refried beans, salsa and cheese (meat and black beans if you want). Bake for about 10 minutes – or until cheese melts. Remove from oven and top with remaining ingredients. The possibilities are endless with this recipe – so many combinations of ingredients! Enjoy! (This is GREAT meatless – and the beans add protein so it is still very filling!)
