One Pan Meal: Dinner for 2 with 4 ingredients
  • Uncle Ben's Rice Mix
  • Two Boneless, Skinless Chicken Breasts
  • One can of chicken broth
  • One can of green beans
  1. Mix the rice and broth in the bottom of a greased 13×9 baking pan.  I add the seasoning packet in this step to flavor the rice (or add later on top of the chicken).  On top of the rice, layer the vegetables and chicken breasts.  Cover with aluminum foil and bake for one hour in a preheated oven at 350 degrees.  That’s it!  The rice cooks around the chicken and veggies, making an easy one-pan meal.
  2. An easy alternative is to add potatoes instead of rice.  I add cut-up New Potatoes and layer with the veggies and chicken.  I like to add a few tablespoons of melted butter over the potatoes.  Actually, you could add melted butter over any variation of this.  The butter adds so much flavor.  Enjoy!
